Taste of the Season: Spring 2023 Menu

If you’re reading this on an empty stomach, prepare to be hit with an intense wave of cravings. We’re here to break down some of the most scrumptious dishes and most irresistible drinks on our brand new Spring 2023 menu for the Dressing Room and Can Can Theatre. 

Our kitchen full of talented flavor connoisseurs and our bar of craft cocktail magicians have designed a food and drink menu that truly gives us the taste of the season. This spring, we’re indulging in freshness, bursts of flavor, and oh-so-satisfying textures.

Poke Wrap

Right off the bat, we absolutely cannot take our hungry, hungry eyes away from the Poke Wrap. This dish is such a delightful blend of fresh, marinated yellowfin tuna, toasted sesame seeds, edamame, avocado, and carrots wrapped perfectly in seaweed and rice. With Mama Lil’s aioli served on the side for just the right amount of heat, the Poke Wrap is a perfect meal choice for our gluten-free friends or a fun shareable to kick things off. 

Lemon Squeeze

Is she sour…or sweet? The Lemon Squeeze is a refreshing and invigorating non-alcoholic drink that perfectly balances the vibrant flavors of Wilderton Lustre's non-alcoholic spirit with the zesty essence of lemon and a touch of simple syrup. This exquisite concoction captures the essence of a summer day, delivering a delightful burst of citrusy goodness with every sip. The Wilderton Lustre adds a sophisticated depth to the drink, mimicking the complexity of traditional spirits without the alcohol content. 

Spring Harvest

Next, we’re giving the spotlight to the Spring Harvest grazing plate. With a white bean and rosemary spread, grilled portobello mushrooms, heirloom tomatoes, seasonal radishes, and beetroot crisps, this dish is truly a tour of every taste of the season. These vegetables are fresh and flavorful, and the beetroot crisps give that satisfying, nearly-addicting crunch. Want to take it to the next level? Ask to add some perfectly seared pork belly on the side for even more oomph.

Laugh Now, Rye Later

This peppery and fruity bev is the definition of nuance. With rye whiskey, China China sweet and bitter orange liqueur, Giffard Espelette's pepper liqueur, and cranberry bitters, this drink gives you warmth, tang, and that “ahhh” feeling all in one. Yes, please! 

Chipotle Chicken Risotto / Beet Risotto

Up next: the flavorful, fabulous Chipotle Chicken Risotto and the vegetarian-friendly Beet Risotto. With braised chicken legs in chipotle and lime, the Chipotle Chicken Risotto is tossed with butter, charred cherry tomato, sweet peas & shaved parmesan. It’s comforting, it’s indulgent, and it’s going to have you licking every last bit off your plate. For a meat-free take, the bright and colorful Beet Risotto is a gorgeous blend of beet puree, butter, parmesan, lemon, and zest. Both dishes are just as satisfying to the eyes as they are to your tastebuds! 

Short Rib Pasta

Last but not least, we’re diving into the Short Rib Pasta. This dish brings our kitchen’s homemade beet noodles center stage, pairing deliciously with the wine-braised beef short ribs, wild foraged mushrooms, and haricot verts. This dish is everything you could ever dream of. Rich, savory, and fresh – you’ll find yourself eating it in your dreams.
